When the stars make you drool just like a pasta fazool… Thats not just amore, but also delicious. The first time I fell in love with this dish was more or less 20 years ago, in a small town called Novilara. We were invited by friends to eat at a trattoria called “Trattoria il Pergolato dalla Maria“. It’s a trattoria that serves a few dishes (5 and on Sunday’s you can order 3 more, only if you ask for it during reservation), not to much, but guarantees the quality. My kind of restaurant… As I said above, I fell in love with their “tagliatelle con fagioli” (tagliatelle with beans).
So here are the ingredients for this wonderful dish:
- 250 gr burlotti beans
- 1 carrot (cut in to small pieces)
- 1 stem of celery (cut in to small pieces)
- 1 onion (cut in to small pieces)
- 1 piece of porc rind (+/- 80 gr)
- 1 ts of tomato concentrate
Keep in mind that when you buy dried beans, you need to put them in a bowl of water for at least 24 hrs.
So now you take a big pot, put in the beans, carrot, celery onion, porc rind and tomato concentrate. Add water, but make sure that everything stays 2 centimeters below the water level. Bring it all to boil and leave it on a low heat for 3 hours.
Time to boil your pasta and eat!
