I lately found this dish in an old photo of a menu from a restaurant in Italy, tried it and was surprised. The vodka makes it sweet, the smoked bacon gives it a special touch and the cream gives it all a nice colour.
So what do you need for 4 portions:
- 1 red onion
- 1 minced clove of garlic
- Some dried chili (you determine how much)
- 100ml of white vodka
- 250gr smoked bacon
- Olive oil
- 1 can of pelati (pealed tomatoes)
- 100ml cream
You start by chopping the onions in to small pieces, mince your garlic and cut your bacon into slices of about 1 cm.
Now you take a pan with some olive oil and put it on high heat, add your dried chili, garlic, onions and bacon. Once your bacon has colored to your desired taste, you add the vodka. Let it now on high heat until the alcohol is evaporated.
Once the alcohol is evaporated you add the can of pealed tomatoes and let it simmer for about 5 to 8 minutes on a medium heat. After that you add the cream and again let it simmer for tops 5 minutes on low heat.
Once your penne are ready you add them to the sauce en stir it until the sauce is absorbed by the penne.
Now you can serve and enjoy!
