Another typical autumn dish is pasta with nuts and cheese. In this case, mezzelune with a filling of walnuts, gorgonzola and ricotta. I added the ricotta because some of my friends didn’t like the strong flavor of the gorgonzola.
First you need to make the pasta. I’ve already made a post about how to make pasta. You can find it here.
To make the mezzelune, you’ll need a tool, a mezzelune stamp. Just look on google where to buy them.
For the filling you’ll need the following ingredients:
- 100 gr finely chopped walnuts
- 200 gr gorgonzola
- 200 gr ricotta
Just add all the ingredients in to a bowl and mix it all so you have a paste that you can easily work with. Now you take your dough and cut out your circles with the stamp. Add the paste and seal the mezzelune with the stamp.
Once you’ve made them all, I recommend you put them in your freezer. It will be easier to boil them. If you don’t freeze them, you’ll risk that the mezzelune stick together when boiling them. It’s something I experienced the first time. This way, you can boil more mezzelune at once.
As the mezzelune have a lot of flavor, I recommend a simple sauce. I made a sauce with passata from cherry tomatoes, garlic and dried chili flakes. Simple, spicy sauce.
