Last week I was searching the web for new recipes and found this beauty… Spaghetti mari e monti (sea and mountains). You combine the best of the sea and mountains. This is a traditional recipe from Le Marche.
Here are the ingredients you’ll need (4 portions):
- 2 gloves of garlic
- dried chili
- olive oil
- white wine
- 400 gr fresh calamari
- 400 gr cherry tomatoes
- 400 gr wild mushrooms (preferably porcini)
- salt & peper
Take a big pot with water to cook your spaghetti in. Add some salt and put on high fire. When the water boils you can add the spaghetti (NOT SOONER!!!).
Cut the mushrooms, calamari and cherry tomatoes in small pieces. Undo the cherry tomatoes of the center (pits and juice) so the sauce won’t be to thin. Now put a pan on a high fire with some olive oil, garlic and dried chili. After more or less than a minute you put in the calamari and mushrooms. Keep stiring for a few minutes (when the calamari and mushroom have colored) and add the white wine (+/- 150 ml). Once the alcohol is vaporated you can add the cherry tomatoes. Now put the fire on low so everything can simmer for a few minutes. Add some salt and peper.
When the spaghetti are “al dente” you can add your pasta to the pan with the calamari. Now you add some chopped parsley and mix it all and it’s ready to be served… Enjoy!!
