Peperonata, another Italian classic. Basic but you can tweak it and add some extra ingredients to spice it up. I’ll show you how to make the basic dish and feel free to add some new ingredients yourself, be creative…
The ingredients are:
- 1 yellow sweet pepper
- 1 green sweet pepper
- 1 red sweet pepper
- 1 red onion
- 1 tb of tomato concentrate
- 2 cloves of garlic
- salt & pepper
- optional: dried chili or some chili paste
You start by cutting your peppers in to thin slices, onions in to small pieces and press your garlic with a garlic press. Put a pan on high heat, add some olive oil, your garlic and dried chili (or chili paste). Now add your peppers and onions. Once you notice that your peppers are getting soft, you add your tomato concentrate. Leave it on a low heat for 20 minutes, season with salt and pepper and it’s ready to serve.
One of my favorite ways to serve peperonata is with some Italian sausage as a sort of “Italian hot dog”. Just bake your sausage and when almost done you throw in some peperonata. Take a crispy piccolo type of bread, add some hot chili paste and put the sausage with peperonata in it. Enjoy!
